The Physiology of Taste by Jean Anthelme Brillat-Savarin

“Tell me what you eat, and I shall tell you what you are.” Jean Anthelme Brillat-Savarin’s The Physiology of Taste was written in the early 1800’s, but remains an insightful and oft-quoted text to this day. Brillat-Savarin was a French gourmand relying primarily on his own observation to deduce the nature of food and taste.  Long-winded, but entertainingly written, the book is a treatise on food and the senses, and the proper enjoyment of a delicious meal. Recommended for culinary enthusiasts.
