A breathtaking masterpiece. Dry, dense, intense, but undeniably a masterpiece. This is the magnum opus of a man that spent more than 40 years the inner workings of the brain as it ponders flavor. There are so many insights and original ideas in this text that reading it once is barely scratching the surface. Basically, you have to read it, go read some other books to understand what he’s talking about, then go read it again and be blown away again. Challenging, but absolutely worth the effort. Recommended for neuroscientists and technical folks, contains lots of technical language. Paperback.
