Where the Flavor Bible is based on anecdotal accounts of ingredient pairings, The Flavor Matrix is based on molecular overlap. According to this book, if two ingredients have similar aromatic constituents, they can pair well. Very useful as a tool for pushing outside the bounds of normal pairings, and a gentle introduction to flavor chemistry. Recommended for people creating new recipes, or looking to incorporate unusual ingredients into their creations.
