Perfumer Mandy Aftel and chef Daniel Patterson’s The Art of Flavor is a masterpiece of a cookbook, and goes well beyond being a source for recipes. This is more of a book about the philosophy and mechanics of cooking, although the story is told with the backdrop of many excellent recipes. From adding interest to a dish, to re-balancing it if tastes become distorted, this cookbook is well worth reading cover to cover. And as one of the few books studying the intersection of perfumery and culinary arts, it very closely aligns with the ideas that Castalia was built to explore. Audience: chefs, foodies, perfumers, people that cook by ‘feel’ rather than by recipe.
